La Subida ha sicuramente il suo fascino con un briciolo di fortuna il sole rende sicuramente questo posto magico…tutto più bello. Si respira il sapore della tradizione a differenza di posti blasonati, come in Puglia, dove si capisce che è tutto artefafatto, ma attenzione all’alloggio che scegliete… ci sono diverse tipologie e vi assicuro fanno la differenza. Avendo deciso all’ultimo abbiamo ricevuto quello che c’era…la casetta della Nonna che si trova all’interno del borgo e fa parte di quelle case ancora da ristrutturare…sebbene fosse tutto funzionante con un letto super comodo, non era il nostro genere. Avendo fatto un giro nel bosco abbiamo capito che l’acetatia, la nuvola e la libreria saranno le nostre prossime destinazioni. Ci torneremo!

Oggi, per caso siamo andati a mangiare alla trattoria al cacciatore, siamo rimasti molto affascinanti già dell'accoglienza dello staff. Abbiamo optato x la degustazione dei piatti Uno meglio dell'altro, dall'antipasto ai dolci. Qualità impeccabile oltre alla professionalità dello staff. Un locale da ritornare.

We recently had dinner at La Subida – Trattoria al Cacciatore, a restaurant with an undeniably charming atmosphere. The setting is beautiful, surrounded by nature and thoughtfully designed down to the smallest details. The service was equally pleasant – warm, attentive, and well-coordinated throughout the evening.

Unfortunately, while the ambiance and hospitality were excellent, the culinary experience fell short of expectations. We tasted several dishes from the menu, but none of them truly stood out or left a lasting impression. The overall sensation was one of technical execution, but without a memorable emotional or flavor impact.

The rice dish was probably the most interesting among what we tried. However, I was puzzled by the addition of four small pieces of eel, which didn’t blend harmoniously with the rest of the plate. Even more concerning, the eel had a strong muddy aftertaste that overwhelmed rather than complemented the dish.

The plin, while acceptable, didn’t reach the level of refinement we were expecting from a restaurant of this caliber. The filling was well-balanced, but the overall flavor and texture didn’t quite elevate the dish beyond the ordinary.

One particularly disappointing moment came when we were informed – upon sitting down at 8 PM – that the pigeon dish, which we had been looking forward to, was no longer available. According to the maître d’, it had already been fully pre-ordered by another table earlier in the evening. We were told that only a few pork shanks remained as the sole second course option. It felt quite limiting for a tasting experience, especially given the early hour of our reservation.

In short, while we appreciated the setting and service, the food didn’t live up to the reputation or the expectations we had going in. We left with the impression that the kitchen is capable, but perhaps a bit too self-referential – focused more on concept than coherence or satisfaction.

We hope our feedback is taken in the spirit of constructive criticism, because the potential is clearly there – and with such a beautiful location and attentive team, we'd love to return one day to a more fulfilling experience.

Luogo incantavole. Ho soggiornato nella casa del bosco, l'ambiente magico, immerso nel verde, che permette un'esperienza di relax totale. Abbiamo cenato presso il ristorante, La cucina squisita, di alta qualità, attenti alla particolarità di ogni portata e cura per la tradizione..
Le camere sono meravigliose, spaziose, eleganti, pulitissime e dotate di ogni comfort, inclusi dettagli come vasche da bagno con vista sul bosco e saune a infrarossi. Sembra di vivere in un sogno.
Il personale gentile, cordiale e attento, capace di far sentire gli ospiti a casa.

Wij zijn alleen naar het restaurant geweest, wat een heerlijke culinaire ervaring was. De sommelier wist mooie wijn voor ons te kiezen en vriendelijk. Het enige puntje van aandacht was voor ons dat het personeel wat gehaast over kwam. Ik begrijp dat het druk kan zijn maar de klant moet niet dat gejaagde gevoel krijgen. Last but not least, het toetje was hemels…❤️❤️❤️

Sono stato a pranzo alla Trattoria "al cacciatore" (quindi il ristorante stellato, non l'osteria, cosa che sfugge a molta gente che scrive recensioni sul posto) lo scorso dicembre con tutta la mia famiglia, dopo anni che ci volevo andare e posso dire che le mie aspettative sono state completamente ripagate.
Il ristorante è situato nel cuore del Collio e la location è veramente suggestiva, calda ed accogliente.
Per quanto riguarda il cibo, beh posso solamente dire che, ci sarà un motivo se è da anni un punto di riferimento per tutta la gastronomia in regione.
Mangiando qui si ha un assaggio degli autentici sapori friulani (trattati ovviamente con un tocco di eleganza gourmet che fa la differenza).
Al menù degustazione ho abbinato anche 4 calici, che mi hanno fatto viaggiare per tutto il territorio, a ricordarmi (da friulano) il motivo del perchè siamo invidiati in tutto il mondo per i nostri vini (ho adorato la Ribolla macerata de La Castellada).
Rapporto qualità prezzo imbattibile per quanto mi riguarda (se si prendono in considerazione i prezzi di tanti altri stellati) e, la gente che si lamenta ritenendolo troppo caro, evidentemente ha girato troppi pochi ristoranti e non ha idea di che cosa sta parlando.
Da tornarci e ritornarci, in poche parole un orgoglio friulano!

Se anche tu come me sei un amante dei posti rustici ed eleganti questi posto sicuramente ti colpirà per com’è stato curato in ogni dettaglio per creare un ambiente raffinato, elegante ma allo stesso tempo caldo e casereccio come una baita di montagna.

Personale molto gentile, competente e cordiale, ti fanno sentire a tuo agio!

Senza dubbio ottima qualità, i piatti sono preparati quasi esclusivamente con prodotti locali.
Buoni i sapori e gli accostamenti, ma da qui il motivo per il quale do 4 stelle anziché 5; Ho utilizzato come metro di paragone un’altro ristorante 1 STELLA MICHELIN in cui sono stato (prezzo lievemente maggiore) ma ho avuto l’impressione di essere stato su due livelli completamente differenti per quanto riguarda l’esperienza di gusti ed accostamenti.
Forse sono arrivato con aspettative veramente troppo elevate, oppure da un ristorante stellato ci si deve aspettare qualcosina in più. Comunque concludo dicendo che la marcia in più rispetto a ristoranti tradizionali c’è anche qui, senza ombra di dubbio.

Just the most wonderful place! An incredible blend of elegance, rusticity, creativity and down-home comfort. Stayed in one of the houses for 2 weeks with our toddler and had a great time. Incredibly comfortable. The trattoria is a must-do: go ahead and do the tasting menu and let Mitja guide your wine selection!

Cogimos el pack de una noche con cena de menu degustacion en la trattoria al cacciatore. Fuimos en verano, el ambiente relajante de las collinas del collio, la amabilidad del personal , y la cena, nos encantaron. Absolutamente aconsejada la compra del vinagre sirk la subida.

tomamos el hotel para un relax antes de llegar a Venecia (veníamos de Ljubljana). No nos equivocamos. Son unas cabañas (pocas)muy completas en un entorno fascinante, en medio de un bosque, con pileta, restaurante a mano. Salvo que busques mucho lujo, no tienes forma de equivocarte si paras aquí.
